
Ingredients
- 1 1/2 C. all-purpose flour
- 1 1/2 t. baking powder
- 1/4 t. baking soda
- 1/8 t. salt
- 1/4 t. cinnamon
- 1 egg
- 1 C. mashed bananas (about 3-4 bananas)
- 3/4 C. sugar
- 1/4 C. cooking oil
Directions
- Preheat oven to 350 F.
- 1. Grease 8x4x2" loaf pan. Set aside.
- 2. In medium mixing bowl, sift together the flour, baking powder, baking soda, 1/8 t. salt, and cinnamon.
- 3. In another bowl, mash bananas. Add egg, sugar, and cooking oil. Mix.
- 4. Add dry mixture to wet mixture and mix.
- 5. Pour into loaf pan.
- 6. Bake for 50-55 minutes or until a wooden toothpick inserted near center comes out clean. Cool on wire rack for 10 minutes. Wrap and store overnight before serving (if it isn't already eaten up.).
