Banana Bread

Ingredients

  • 1 1/2 C. all-purpose flour
  • 1 1/2 t. baking powder
  • 1/4 t. baking soda
  • 1/8 t. salt
  • 1/4 t. cinnamon
  • 1 egg
  • 1 C. mashed bananas (about 3-4 bananas)
  • 3/4 C. sugar
  • 1/4 C. cooking oil

Directions

  1. Preheat oven to 350 F.
  2. 1. Grease 8x4x2" loaf pan. Set aside.
  3. 2. In medium mixing bowl, sift together the flour, baking powder, baking soda, 1/8 t. salt, and cinnamon.
  4. 3. In another bowl, mash bananas. Add egg, sugar, and cooking oil. Mix.
  5. 4. Add dry mixture to wet mixture and mix.
  6. 5. Pour into loaf pan.
  7. 6. Bake for 50-55 minutes or until a wooden toothpick inserted near center comes out clean. Cool on wire rack for 10 minutes. Wrap and store overnight before serving (if it isn't already eaten up.).
