
Ingredients
- 5 eggs
- 1/8 c. milk
- 1 c. potato wedges sliced into 1/2" chuncks
- 1/2 c. white onion, diced
- 3 T. butter
- salt and pepper to taste
- 1 T. vegetable oil
- 5 slices cooked bacon, chopped
- 2 T. fresh chives, chopped
- Tip:
- Kroger's frozen potato wedges and frozen chopped white onions make this easy.
Directions
- Preheat oven to 350°. Heat oil in medium pan and saute the potatoes and onions until soft on the inside and crispy on the outside. Cook bacon in microwave while you cook the potatoes. Whisk eggs in a bowl and whisk in the milk, salt, and pepper.
- Heat an oven safe skillet on medium and melt butter. Pour eggs into pan and reduce heat to low. Add potatoes, bacon, and chives.
- Put pan into oven for about 8 minutes.
