Ingredients

  • 3/4 lb. unsalted butter
  • 3 1/2 cups flour
  • 7 oz. sweetened, flaked coconut
  • 1 cup sugar
  • 1/4 t salt
  • 1 t vanilla
  • 1 beaten egg with 1 TB water
  • 1 jar raspberry jam

Directions

  1. Preheat oven to 350. In mixed, cream butter and sugar. Add vanilla. Sift flour and salt. Add flour to creamed butter and sugar. Dump onto floured surface. Roll into a flat disk. Wrap in plastic wrap and chill for 30 minutes. Roll dough into 1.25'' balls. Dip each ball into egg wash then roll in coconut. Place ball on ungreased cookie sheet and press a light indentation into top of each cookie with finger. Drop 1/4 teaspoon of jam in each cookie. Bake 20-25 minutes, until coconut is golden brown. Cool and serve.
