Spicy Thai Noodles

a side dish that could be transformed into a meal

Ingredients

  • 1 box linguine or angel hair pasta
  • 1 T. crushed red pepper
  • 1/4 c. vegetable oil
  • 1/2 c. sesame seed oil
  • 6 T. honey
  • 6 T. soy sauce
  • green onions
  • cilantro
  • peanuts
  • toasted sesame seeds (optional)

Directions

  1. Boil noodles to package directions and drain. While noodles are boiling, heat oils and red pepper in a skillet. Strain out the red pepper and discard. Chop green onions, peanuts, and cilantro for topping.
  2. Whisk honey and soy sauce into oil and toss mixture with the noodles.
  3. Refrigerate until cold. Top with green onions, peanuts, cilantro and toasted sesame seeds.
  4. You could add a meat and tofu with this to make it similar to pad thai.
