Spinach & Artichoke Dip

Ingredients

  • 1/2 c. butter
  • 14 oz. can artichoke hearts, drained and chopped
  • 1c. shredded monterey jack cheese
  • 1 medium onion, chopped
  • 2 10 oz. pkg frozen chopped spinach, thawed and drained
  • 1c. grated Parmesan cheese
  • 8 oz. cream cheese, softened
  • 8 oz. sour cream
  • 2 T. Tabasco sauce

Directions

  1. Melt butter. Add onion - 5 min.
  2. Stir in spinach, hearts, sour cream, cream cheese, and ¾ C Parmesan cheese, ¾ C. Monterey Jack, Tabasco, salt and pepper to taste.
  3. Pour into ½ qt. casserole dish, top with leftover cheese. Bake 350º cheese will brown -10 minutes.
  4. Serve with crackers or toast.
