Ingredients

  • 1 lb. ground beef
  • 2/3 cup chunky salsa
  • 1 pkg. taco seasoning
  • 3/4 cup shredded cheese
  • 1 - 2 cans canned biscuits
  • sour cream

Directions

  1. Brown ground meat with taco seasoning, drain off excess grease.
  2. Preheat oven to 400 and lightly grease muffin tin.
  3. Combine salsa and ½ of cheese with seasoned meat
  4. Separate biscuits. Then one at a time, roll flat with a rolling pin, place in muffin tin and fill with meat and salsa mixture.
  5. Bake for 15 minutes. If you find your biscuits are turning brown on top too quickly, cover lightly with foil.
  6. When biscuits come out of the oven, sprinkle with remaining cheese and serve with additional salsa and a dollop of sour cream if desired.
